Lester B. Pearson School Board launches butchery program for students
The Lester B. Pearson School Board (LBPSB) is offering a retail butchery program to students in Montreal.
Sixty per cent of the training will take place at a vocational centre, while 40 per cent will be set in the workplace.
With the ongoing demand for more skilled workers in this sector, the board says this program will offer unique hands-on training.

“As the only centre in the province to offer the program in English, it opens doors for students across Quebec,” reads a news release. “We are also providing funding for out-of-province students and international students who need to relocate, helping to alleviate labor shortages across the province.”
The program will offer several advantages for those who want to become a butcher.
For example, they could go on to work as an artisanal butcher, in charcuterie or meat curing. Eventually, they could even open their own shop or business.
Also, after they’ve completed the training, students will be able to work in supermarkets, specialty butcher shops or meat processing plants.

In the program, they’ll gain hands on experience and develop valuable knife handing, meat cutting and preparation techniques.
According to a press release, skilled butchers also earn competitive salaries, especially if you have prior experience, specialized knowledge, and loyal clients.
“Work hours can vary, and many butchers can find part-time, full-time, or seasonal work, depending on their preferences.”
